EC TV- What’s Cookin’? Momma’s Cherry Pie With Brian Isbell Garcia
Not only is Brian Isbell Garcia a top notch horse trainer, he makes a mean cherry pie! In today’s edition of What’s Cookin’, Brian shows us how to make his Momma’s Cherry Pie.
Ingredients:
- 3 cups pitted sour cherries
- 1 1/4 cup white sugar
- 10 teaspoons cornstarch
- 1 tablespoon butter
- 1/4 teaspoon almond extract
- Pre-made pie crust
- 1 egg
- 3 tablespoons of water
Instructions:
- Roll out one disk of dough into an 11 inch circle. Line a 9 inch pie pan with the pastry. Refrigerate until needed. Roll out the dough that will be used for the top crust lattice, transfer to a plate or baking sheet, and refrigerate.
- Preheat the oven to 375 degrees. Place a baking tray in the oven to preheat.
- Place the cherries, sugar, and cornstarch in a medium-sized, non-aluminum saucepan. Stir and allow the mixture to stand for 10 minutes, or until the sugar draws out the cherries’ juices. Bring to a boil over medium heat, stirring constantly. Lower the heat and simmer for one minute or until the juices thicken and become translucent.
- Remove the pan from the heat and stir in the butter and almond extract.
- Allow the filling to cool.
- Pour the filling into the pie shell. Cover with a top crust lattice, crimp the edges to seal, and cut vents for steam.
- Beat together 1 egg and 3 tablespoons of water to make an egg wash to brush on the top crust.
- Bake in a preheated 375 oven on a baking tray for 45-55 minutes. Cool for 15 minutes.
